The letters don't have a lot of special meaning. The first character is assigned to the plant (Spartanburg used L until recently, and now it uses 0), the second one is arbitrary. BMW assigns ranges of VINs to every model as needed. In this example, US X5M got LK25000-LK27999 at first. When these numbers ran out, BMW couldn't continue at LK28000 since that range belonged to EU X5 4.8i, so another range was given, and then, when it was also exhausted, the third one.

Figuring out, which of these cars were configured in a specific way, is less trivial, but also possible. Of course, I can't dump the complete list of options on each of those 4K+ VINs, but ask me what you're looking for, and I'll give you the VINs that match.
