The X5/X6 is not the same shape as the one shown, maybe that was a bad example. Also, by each side I meant each side of the car. I am trying to find an image that better shows it.. but, no. The X5/X6 bump stop is flat on the bottom end, so you just slice off from there.
As far as how much to trim, I would just say try until you get to a point that is comfortable for you and your desired ride height. Worst case, it is an inexpensive part to replace. There are also shorter bump stops available out there, but likely nothing for the X5/X6.
