Great looking bbq. How long were the ribs on for? That's some impressive bark.
For the people asking about the membrane. Butter knife and paper towel. I usually start on the end so i can grab it easier with the towel. |

For the ribs...I let them get to room temp, had them on the smoker for 5 hours at 210-220 till I could get a good tear. From there, wrapped them tight in foil and put a bath towel around them for about 45 minutes. Then, unwrapped and I put them on the weber kettle to apply the sauce. Few flips each side...
Still owe the rub recipe...soon. |

Hmmmm....somethin's smoking tonight. Yeah - couple pork butts - in my special rub.
Putting it on now, so if you guys know where I live...maybe you can steal them off the smoker in the middle of the night (just be careful of the two guards watching over them). Putting these on at 10:00PM - in hopes they are perfect tomorrow at 3:00PM. I'll also toss a brisket on at 7:00AM. Wasn't happy with the one above...so I'm going a little different on this one.
