How narrow winter tires can be for 20" rims?

Want to keep my 20" rims on x6 and get winter tires. Currently I have Front: 275/40-20 Rear:315/35-20 Please advice how narrow I can go with winter tires to get better grip and still maintain good stability.
What type of winter tires you will recommend for NYC area?

I had 275s all around on my factory wheels. They worked well, no issues but they were stretched pretty good over the rears. For ease of installment I wouldn't go less than 285 on the rears.
I had Pirelli ice and snow, they were great but I would pick Nokians over them if given the choice.
