AC comes w auto mode

Can anyone tell me why the AC comes on when I put environmental to auto mode , I have temp set to highest setting 84 degrees ?

The ac comes on to remove humidity from the cabin...

Ok that makes sense, being that it was 17 degrees here yesterday I wasn't to thrilled to have AC on too long

yes - to remove humidity. if not you get fog on a cold day when you blast the heat

If it annoys you, you can have it coded so it doesn't come on.

AC doesn't mean it's cold air. It can be warm or hot. Keeps your windows from fogging and provides dry air as someone already mentioned. Just like in a Building or Home. Your "AC" has multiple functions. It can also be a heat pump.
