I have a 2012 X5M and just put non-staggered winter tires/wheels on. Will these spacers work to move the rear wheels out flush with the body?

X5M has different hub size in the rear 72.5mm and 74.1mm in the front compared to regular X5 at 74.1 mm front & rear.

They would work well assuming your winter wheels have 74.1mm hub bores and you are already using hub-centric rings in the rear. You would simply use the hub-centric rings to install the spacers, then bolt the winter wheels onto the spacers. Unless you are using OEM BMW X5M wheels I would be surprised if you have a winter set that has 72.5mm and 74.1mm bores respectively. I would bet you are using rims with 74.1mm bores or greater and are using hub-centric rings in the rear at least.

Hope this helps.
