There are a lot of factors that can contribute to your rubbing issue. 25mm is a bit aggressive and compared to someone running a custom wheel your offset is likely not the same. Also the tire sidewall profile can also contribute to rubbing on aggressive setups.
I’m running stock 20” 214 wheels sitting at 30” in rear with I think 20mm spacers and I’ve done some serious towing without issue. Sounds to me your wheel/tire/spacer setup is just too aggressive or the rear suspension is overly soft.
