I could run 11 wide +40 offset and be 13mm more "stick out".
22x11 all around. +18mm rears, +40mm fronts. 295 30 and 335 25

you have the right tire sizes in mind. Not sure what wheels you are looking at. Haven't seen one that has a 22 x11, but not a 22 x 10. Even a 22 x 9.5 would be better.
