I actually wrapped a thin layer of felt carpeting, maybe 1/16" thick by the width of the latch and secured it with an adhesive, around the latch. This approach has seriously lessened the frequency of the creaking. Now it's a couple times a day, versus over any bumps in the road, with a lot less intensity!
It seems to me to be caused by the exceptional tolerances allowed in this latch/joint, and with any flexing/twisting of the vehicle the sound is attenuated in this region.
